This is my most requested recipe & is a favourite amongst the CFIT squad. It's my Flourless Porridge Bread. It's delicious and wholesome bread recipe that's not only easy to make but also packed with nutrients. With a blend of porridge oats, yogurt, nuts, and seeds, this bread is not only good for you but also incredibly flavourful. In this blog post, we'll guide you through the simple steps to create this 2-pound loaf that will leave your taste buds wanting more.
Ingredients:
- 400g Porridge Oats
- 2 tsp Baking Soda
- 1 tsp Table Salt
- 500ml Natural Yogurt
- 1 Egg
- 3 - 4 tbsp Milk
- 1 tbsp Treacle
- 4 tbsp Mixed Seeds (optional)
- 2 tbsp Mixed Nuts (optional)
Method:
1. Preheat and Prepare: Preheat your oven to 160°C and grease and line a 2-pound loaf tin with parchment paper.
2. Combine Dry Ingredients: In a bowl, combine the porridge oats with baking soda and table salt. Stir well to ensure even distribution.
3. Mix Wet Ingredients: Add yogurt, egg, milk, and treacle to the dry mixture. Beat the ingredients until well combined.
4. Add Nuts and Seeds: Incorporate mixed nuts and seeds into the batter for an extra crunch and nutritional boost.
5. Transfer to Loaf Tin: Transfer the mixture into the prepared loaf tin, leveling it out. Sprinkle additional seeds on top for an appealing finish.
6. Bake: Bake in the preheated oven for 40 minutes. After this time, remove the bread from the oven, turn it on its side in the tin, and return it to the oven for an additional 10 minutes or until the bread sounds hollow when tapped.
7. Cool and Serve: Once baked, transfer the bread to a wire rack to cool. Slice and serve within 2 days for the freshest taste.
