Indulge in the simplicity and speed of my quick and easy Christmas Rocky Road recipe. This delightful no-bake dessert takes just 10 minutes, making it a perfect treat for those with a sweet tooth and a busy schedule. The beauty of this recipe lies in its throw-everything-in-a-bowl-and-mix approach.
You'll Need:
• 300g white or dark chocolate
• 1 tablespoon of coconut oil
• 140g marshmallow / big or large
• 45g dried cranberries
• 45g raw pistachio, roughly chopped
Method:
1. Line and grease a square baking tin, set aside. Slice marshmallows in half and roughly chop the pistachios. Place chocolate and coconut oil in a saucepan over low heat. Stir gently until melted.
2. In a separate bowl, combine marshmallows, dried cranberries, pistachios. Then pour over the melted chocolate and mix well.
3. Transfer rocky road to the prepared tin and spread evenly. Refrigerate for 1 hour, then slice and serve.
