Healthy Date Oat Bars

Sweet, chewy, and packed with goodness — the perfect snack for a busy week.

These bars have become one of my go-to Sunday bakes. They’re made with simple ingredients, naturally sweetened with dates and maple syrup, and have just the right balance of chewy and crumbly. They also freeze brilliantly, making them ideal for lunchboxes, pre-workout snacks, or that 3pm cup of coffee moment.

Ingredients

Date Layer

200g Medjool dates, pitted
1 tbsp maple syrup
1 tbsp melted coconut oil

Base + Topping

200g oat flour
50g rolled oats
50g salted caramel protein powder (or vanilla works too)
1 tsp baking powder
½ tsp salt
50g maple syrup
80g melted coconut oil


Method

1. Preheat the oven to 180°C and line an 8x8-inch tin with parchment paper.

2. Make the crumble base:
In a large bowl, combine oat flour, rolled oats, protein powder, baking powder, and salt.
Add in the maple syrup and melted coconut oil, mixing until it forms a crumbly texture.

Press around two-thirds of this mixture firmly into the base of your tin to form an even layer. Keep the remaining third aside for the topping.

3. Prepare the date filling:
Place the pitted dates in a bowl and pour over enough hot water to cover them. Leave for about 10 minutes to soften, then drain well. Add the softened dates, melted coconut oil, and maple syrup to a blender or NutriBullet. Blitz until smooth and sticky.

4. Assemble:
Spread the date mixture evenly over the base, then sprinkle the remaining crumble mixture on top. Gently press it down with the back of a spoon.

5. Bake:
Bake for 20–25 minutes, or until golden on top.

6. Cool and slice:
Allow to cool completely before slicing into bars.
